COMPLETE CUSTOMIZATION

Reserve your share today with a deposit ($200 Half/$400 Whole). This is our a-la-cart premium pork share, which means you have ultimate freedom over what you want from your share. The farm only has a basic price/lb of hanging weight, plus you choose what additional processing costs. These are special orders, and if you have any questions, I will be happy to jump on the phone and discuss. Simply email me, and we will set up a time to talk.

Once you reserve your share with a deposit, we will send you an online form to fill out and specify all sausage seasonings, cuts, and curing options.

Here are some of the options you will be able to choose from.

  • SAUSAGE FLAVORS: Andouille, Cajun, Smokey Jalapeno, Breakfast (Mild/Spicy), Chorizo, Italian, Keilbassa, Bratwurst, plus sugar-free options

  • PACKAGING: sausage links, patties, or chubs.

  • CHARCUTERIE: conventional cure, natural cure, sugar-free cure on bacon and hams, plus hickory smoke.

  • RENDERED LARD

  • THICKNESS: choose your desired thickness of pork chops and bacon.

FEES

Half Pastured-Pork Share: $3.10/lb hanging weight plus processing fees*

Whole Pastured-Pork Share: $3.00/lb hanging weight plus processing fees*

Our farm charges a base fee of $3.00 (whole pork) or $3.10 (half pork) per pound of hanging weight. On average, our pastured pigs weigh between 175-210 lbs at hanging weight. So our farm charge would be between $525 and $630 for a whole pig.

*Next will be the fees from the processor. $1.00/lb hanging weight (whole pig) or $1.25/lb hanging weight (half pig) is the base fee. Other fees apply to individual cuts and sausage: $22.25 Premium Sausage Fee for 25 lbs of sausage, and $3.50/lb for curing and smoking.

In total, you can expect processor fees to range from $250-$500 for a whole pastured-pork (depending on options chosen) and half of that for a half pastured-pork share.

Our service will be to delivery your pastured-pork share to the processor and deliver the finished cuts to your house. Final payment of processor fees and remaining balance to the farm will be due before or upon delivery.

Whole Pastured-Pork Base Fee: $1.00/lb hanging weight

Half Pastured-Pork Base Fee: $1.25/lb hanging weight

Sausage Flavors: 1) Breakfast Seasonings (Mild/Hot): $14.00 (per 25 lbs of sausage). For Half Pig Shares, you can only order one flavor. Whole Pig will be able to order two. 2) Premium Seasoning: $22.50 (per 25 lbs of sausage); 3) No Sugar Added Seasonings: $24.75 (per 25 lbs of sausage).

Sausage Packaging: 1 lb Package: No Fee; Patties: $2.50/lb; Small Links: $2.95/lb; Large Links: $2.55/lb

Cure/Smoke: $3.50/lb; Natural Cure: $5.45/lb; Natural Cure/No Sugar: $5.75/lb

Slicing Fee: $0.90/lb

Hanging Weight: 200 lbs

Farm Cost at $3.00/lb = $600

Processor Fees:

Base Fee at $1.00/lb = $200

Handling = $71

Slicing Fee: $13.50
